Homemade Peppermint Ice Cream in the Vitamix



Christmas is just around the corner and when a sweet tooth craving hit, all I could think of was Mint Chocolate Chip Ice cream. The problem is, we are dairy free around here and it's so expensive to buy non-dairy ice cream that it's not something we have in the house too often.

But since we love using our Vitamix for Breakfast Ice Cream, I figured I could come up with something that resembled store-bought Mint Chocolate Chip Ice Cream. I was pretty pleased with the results. It's definitely a soft serve style, but the kids and I thought it tasted amazing.

I love that I can make this quickly without a lot of time or steps involved and that it doesn't require an ice cream maker. Thankfully, even though it's short on the number of ingredients, it's definitely not short on yum.

Here is what you need:

1/2 c. maple syrup
1 can of full fat coconut milk
enough ice to fill half of your Vitamix
1/2 c. Chocolate Chips
(We use dairy/nut free Enjoy Life mini chips)
5 drops of Peppermint Essential Oil
(please be sure your Peppermint Essential Oil is food grade.)

Step 1: Pour all of the ingredients into your Vitamix, except for the chocolate chips.

Step 2: Blend until it's a nice soft-serve consistency.

Step 3: Add your chocolate chips and blend only enough to mix the chocolate chips in.

Step 4: If you're ready to eat it as is, it will taste amazing. But if you have the will-power to wait and you prefer a slightly harder ice cream, transfer your ice cream to another dish and place in the freezer for 4 hours. For us? We love to eat it right then and then freeze the leftovers. :)

Using Peppermint Essential Oil is a tremendous added benefit. Not only does it add amazing flavor to the ice cream, but it's also naturally antibacterial and antiviral. That sounds like two very good reasons to eat this ice cream every day, especially since we're in the midst of cold and flu season. :) I hope you like this yummy treat as much as we do!
