Chicken Salad

This salad recipe is a variation from Grandma Mundy's Chicken Salad Sandwich Recipe:

2 cans of shredded chicken
1/2 c. Mayo
3/4 c. Craisins
2 green onions, chopped
1/2 c. chopped pecans
1/2 t. Lawry's
dash of celery salt

Mix together and serve over Mixed Baby Greens. I also like to top with fresh blackberries and wedges of clementines. Drizzle with Balsamic Vinaigrette dressing.

For Grandma Mundy's Recipe:
4 c. cubed chicken
1 c. Mayo
1 t. paprika
1 1/2 c. Craisins
1 c chopped celery
2 green onions, chopped
1/2 c. minced green bell pepper
1 c chopped pecans
1 t. Lawry's
black pepper to taste

Serve on croissants. This is a huge hit with everyone!

i LOVE chickie salad on a croissant!! i so wish i was eating that for lunch right now :)
