I promised one of my readers that I would get this recipe posted. I'm just sorry it took me as long as it did to get it done! It's a great recipe for a treat now that the weather is getting cooler. I hope you enjoy it as much as we do. (And I have a confession to make...I've actually never made it! My husband always makes it.) Lucky me! :)
Oatmeal Cake
Ingredients:
1 c. quick oats
1 1/4 c. boiling water
1 c. brown sugar
1 c. sugar
1/2 c. butter
2 eggs
1 1/3 c. flour
1/2 t. salt
1 t. soda
1 t. cinnamon
Directions:
Combine oats and water; set aside to cool. Cream together sugars, butter and eggs, then add to cooled oats. Sift dry ingredients and mix well in batter. Batter will be runny. Bake at 350' for 40 minutes. Bake in 9x13 pan.
Topping
2/3 stick butter
1 c. brown sugar
1/2 c. milk
1 c. coconut
1/2 c. chopped nuts (optional)
Mix above ingredients together and spread on warm cake. Broil 3-4 minutes. Watch closely.
