Garlic and Butter Pot Roast



I used to LOVE to make Pot Roast with Lipton Onion Soup Mix but I stopped buying it awhile back because I knew the ingredient list wasn't good for us.

Here's what's in Lipton Onion Soup Mix: Onions (deyhydrated), salt, cornstarch, onion powder, sugar, corn syrup, hydrolyzed soy protein, caramel color, partially hydrogenated soybean oil, monosodium glutamate, yeast extract, natural flavors (Really? And what are those might I ask?), disodium inosinate, disodium guanylate. Don't know what those last two ingredients even are? Probably a good clue that we shouldn't consume them.)

While I do not abstain from every food choice on the planet that is bad for us, removing Lipton Onion Soup from the grocery list is one choice that I have made.

However, that meant my pot roast has been insuperior in taste for awhile now. Boo!


Until tonight...

Enter: Garlic and Butter Pot Roast. Your family will love it (and you for making it.)

Here's what I used:

3 lb Roast (free of antibiotics if you can)
5 carrots, peeled and sliced (I would have used more if we'd had them)
9 potatoes or so; peeled and sliced into quarters
1 stick of organic butter (trust me on this one and don't worry, butter's not as bad as it's made out to be!)
3 c. water
2 medium sized onions, peeled and sliced
6 cloves of crushed garlic (Pampered Chef has a great Garlic Press)

I combined all of the ingredients and cooked them on low for about 9 hours. My husband requested gravy so I whipped up a some of the drippings and flour.

Verdict: I have to say, I feel so satisfied and happy with the results. The family agreed it was "blog worthy" so I hope you'll give it a try!

I also use onion soup mix, but now I want to try this alternative! It looks yummy!
