The Old Standby---Peanut Butter Cookies!

Well, I had a hankering for peanut butter cookies today. Carter and I decided to make some while the other 2 kids were sleeping. I decided to make a double batch, because honestly, it is rare that I'm in the mood to bake cookies. Maybe I'm too lazy but I feel like they're too much work. I'd rather just mix the dessert all together and stick it in a pan instead of doling out each individual cookie. However, I do love the Pampered Chef tool that lets you measure them all out the same and really does make the process much easier! Anyways, since I decided to do a double batch I wanted to freeze the dough, but wasn't sure about logistics. I read on-line an idea that said to freeze them already measured out. Just drop the dough balls onto a cookie sheet and place in the freezer. I stuck them in for an hour and that seemed to be just right. Afterwards I transferred the cookie balls to a freezer bag labeled with what they are and when they need to be used by. According to www.Organized-Mom.com cookie dough will freeze well for 4-6 weeks. When I'm ready to bake another batch I'll simply let them stand at room temperature for about 30 minutes before baking.

ooh, that is a great idea to freeze them in dough 'balls'! i need to utilize my freezer more...although i do tend to enjoy the actual making/baking process more than most people :)

yah, I have just started using my freezer more. i'm trying to remember to start doubling stuff and freeze it (i don't normally think ahead like this! ha!)

btw, what all do you use your oats containers for? do you mean crafts for the kids?
