Baked Parmesan Kale Chips


Last night I harvested some fresh kale from our garden. Originally I was planning to just freeze it and save it for this amazing Zuppa Tuscana recipe, but then I remembered that my friend had recently mentioned making Kale Chips.

I knew that my mom had a recipe so I gave her a call and then the two younger kids and I promptly got started on making our very first batch of Baked Parmesan Kale Chips. And they were pretty much incredible.

In fact, they vanished within a minute or less I'd say.

I know some of my lovely "Likers" on Facebook mentioned they had tried making Kale Chips before and they weren't that great. So, let me give you my mom's tried and true tips! She's not sure where she got the original recipe, but I might as well share some blog love and link up to Skinny Taste since she has the same recipe.

1 bunch of Kale
olive oil spray
sea salt to taste
1/2 c. shredded Parmesan cheese (although I just used grated)
  • Spray oil on baking sheet (I used my Pampered Chef Large Stoneware Bar Pan which ensures even baking and draws moisture away from the surface which is essential when making Kale chips. I could go on and on about stones, but I won't. :)
  • Wash and dry kale (I used my awesome salad spinner. With growing our own lettuce and kale I can't imagine not having this tool because lettuce especially gets SO dirty in the garden. In the past I used to hand wash each piece at least two times! NOT fun!)
  • Remove stem (I read a little trick about this once. If you fold the kale in half you can just cut right down the spine and remove the stem. Works great!)
  • Use cute chubby hands (or whatever you have on hand, lol!) and pat the pieces dry between a piece of paper towel.
  • Tear into bite sized pieces.
  • Spread in a single layer on your stone (If you don't use a stone, you're going to want to flip them all midway in the oven)
  • Bake at 350 degrees for 10-12 minutes. Add Parmesan cheese and bake for another 5-6 minutes. (you can also add cayenne pepper to taste instead of the cheese at this point. If you do, you do not need to bake it any more.)

These were yummy and so good for us! Kale is a great vegetable because it is high in fiber and also, for many of us, an untapped resource for nutrients such as Vitamin A, calcium and phytonutrients. source What are phytonutrients? They are an arsenal of good stuff for you, that's what!

I am incredibly happy that my kiddos consumed these in no time flat. I'm just wishing now that I had more than four plants in our garden!





It is our first time planting kale and I think next year we'll have to double that amount. I hope you'll give kale a try, too!

    Your kids are adorable! I like your idea of adding parmesan to your Kale Chips...I'll have to try that.

    I might try these. Getting my kids to eat Kale would be quite the accomplishment. Thanks for sharing. Someone told me red head were getting more rare. I have two red heads. I think they were wrong.

    Laura, I hope you try it! That's funny that you also have 2 red heads. Yes, I'd heard the same thing when my oldest was a baby--that they were going to be extinct! Well, we contribued 2! :) And I have a niece the same age as my daughter who also has read hair! :)

    I've never tried Kale but have been meaning too. Maybe this is how we'll give it a shot.
