Strawberry Soup



This past June we went strawberry picking and managed to pick 46 pounds of strawberries! As you can see in the picture below, we ate some, but the rest we froze whole for smoothies and such.

However, it's nice to have a little variety and several years back I started using this recipe for Strawberry Soup. It was a huge hit with the kids and they thought it was great that we had it for lunch today--whip cream and all--what a treat!




Strawberry Soup

This is a great recipe for a hot summer day. You'll need to pair it with some other light sides because it's not very filling, but it is yummy and good for you!

Ingredients:

2 c. hulled strawberries (fresh or frozen, but at least semi-thawed)
1 c. orange juice
1 c. vanilla yogurt (I actually used banana/vanilla flavored yogurt and some plain kefir because that's what I had on hand.)
1/2 t. vanilla extract
whipped topping

Directions:

In a blender, combine all the ingredients but the whipped topping and process until smooth. Pour the soup into bowls and top with a dollop of whipped topping. (I use the real cream aerosol kind from Trader Joes rather than the non-dairy kind.) For our family of 5, I double this recipe. I got this recipe from the Food Network.
