Easy Refrigerator Jam



I stopped buying jelly and jam years ago because of the ingredients that I didn't care for. I didn't want to home can it either because of the sugar content but this easy refrigerator jam is only sweetened with honey or maple syrup. My kids love this on their toast in the mornings or slather it on when I make homemade muffins.

Here's what you'll need:


Directions:

Add the chia seeds to 1 c. of water and let them sit for about 15 minutes so that they form a gel. Once they have, add your lemon juice and sweetener of choice. Poor all of your ingredients into a blender and blend until it's a nice creamy consistency. Transfer to a jar with a lid and keep in your fridge.



I really can't tell you how long this will stay fresh for in the fridge because ours gets eaten so quickly, but I would probably make sure it's used within 2 weeks. That being said, if you're not going to go through it as quickly as us, just cut the ingredients in half. 


I have made this recipe using either frozen organic strawberries or frozen organic raspberries and both were great. I've also done the recipe using either maple syrup or raw honey and both were yummy! My kids loved both kinds of jam! You can make a batch of this from start to finish in under 10 minutes.


I love that this jam is made with raw ingredients to preserve the nutrition, that you're getting the added benefits of chia seeds and that you are using only a little sweetener in it, especially compared to store bought jam.
