Gingerbread Pancakes

These gingerbread pancakes make a fun and tasty breakfast that both kids and adults will love.  They are full of all those warm, cozy flavors that were just meant to be enjoyed on cold winter mornings.

To get the gingerbread man shape, I spooned the pancake batter into an icing bag with a large tip and piped the shape right onto the griddle.  It took a little practice to get them to look right, but the odd-shaped ones tasted just as good as the pretty ones did!  I have a feeling that they would even taste pretty good in a regular old pancake shape too.

Gingerbread Pancakes

Ingredients:
  • 1.5 cups whole wheat pastry flour (or unbleached AP flour)
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sucanat
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 1/4 cups buttermilk (or kefir)
  • 1 egg
  • 3 tbsp melted butter (not hot)
  • 1 tbsp blackstrap molasses
Preparation:
  1. Whisk the flour, baking powder, salt, sucanat, cinnamon, ginger, nutmeg and cloves together in a bowl.
  2. In a separate bowl beat the buttermilk, egg, butter, and molasses until smooth.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Heat a lightly oiled griddle over medium-high heat.
  5. Place pancake batter into an icing bag with a large tip (or a ziploc bag with a small hole cut in one of the bottom corners).
  6. Pipe gingerbread man shapes onto the hot griddle (or drop batter by large spoonfuls for regular round pancakes) and cook until bubbles form and the edges are dry.  Flip and cook until browned.
  7. Repeat until batter is all used.
  8. Serve with freshly whipped cream and real maple syrup.  Enjoy!

My favourite pancake recipe is almost exactly like this, but it has a little more flour and replaces some of the buttermilk with pumpkin puree... so then you have PUMPKIN gingerbread pancakes. Even yummier :)

Oh my, Emily, that sounds amazing! I have some pumpkin puree in my fridge, so I need to try that ASAP! :)

Yum! We love gingerbread pancakes! I serve apple slaw on mine.....but mine don't look nearly as cute. I'm not an artist. ;-)

We'll have to try that. We have a lot of pumpkin puree (which you can tell after reading my husband's pumpkin post about the crazy amount we got from our pie pumpkins!) Pumpkin is soooo good for you too!

Stacy, What is apple slaw? I've never heard of that.
