Honey Glazed Chicken That Will Knock Your Socks Off



This recipe will knock your socks off and make you feel like a million bucks.

It's what I like to call Honey Glazed Chicken and taste-wise, it might be reminiscent to a sweet and sour chicken dish you'd find in a Chinese restaurant. But better.


Here is what you need:

3 chicken breasts cooked and cut into bite-sized pieces
1/4 c. olive oil
3 garlic cloves, crushed
1/2 t. ginger
1/2 c. apple juice
3/4 c. honey
3 T ketchup
2 T apple cider vinegar
1/2 c. water
1/2 c. coconut aminos
Serve over rice

Cook chicken in olive oil on low heat until no longer pink. Add crushed garlic, ginger, apple juice, honey, ketchup, apple cider vinegar, coconut aminos and water.

Bring to a boil, reduce heat and simmer for 30 minutes, occasionally flipping the chicken.  During this time,  cook your rice by bringing 2 cups of water to a boil. Add 1 cup of rice and cook on medium to low heat for 15 minutes.

After your chicken and sauce have simmered for 30 minutes, remove the chicken, cut it into bite-sized pieces and add back to pan.

When your rice is done, stir it into the pan, being sure to evenly coat the rice in the honey glazed sauce.

You can serve this with a side dish, but I thought it was filling enough as is. It is pure yum.
