Peanut Butter and Chocolate Chip Smoothie



I mentioned last week when I shared my newest Immune Boosting Smoothie recipe that I'm on a bit of a smoothie creating kick. I've been reading tons and tons of information on nutrition lately and am starting to incorporate a lot of that knowledge into our daily meals.
But I have to say, the meal I struggle with the most is breakfast. Can you relate?

In our house, of course we're all hungry first thing in the morning, children need to be cared for and I want to find something that's inexpensive (unlike cereal), healthy and that will curb my mid-morning cravings. Well, I have just the recipe for you if you are in the same boat as me and want something that will meet all of those demands. It's my newest smoothie recipe and it's a bit of a guilt free, taste bud indulgence in my opinion.

This recipe doesn't call for any added sweeteners with the exception of a handful of soy and dairy free chocolate chips (which, in my opinion, taste better than "regular" chocolate chips.)



Peanut Butter and Chocolate Chip Smoothie

Ingredients:

1/2 c. almond milk
1/2 c. oatmeal (We buy ours in bulk on Amazon)
2 T. peanut butter (or nut or seed butter) (We also buy this in bulk on Amazon for our son's daily "dose" after completing OIT for his peanut allergy.)
1 t. organic ground flaxseed
1/2 t. hemp seeds
1-2 T. organic coconut oil
1 t. organic chia seeds
3-4 T. Enjoy Life Chips

Blend all ingredients in a Vitamix until mixed well. This is a nice, thick, fulfilling smoothie that's perfect for breakfast. Enjoy!
